| Root
and tuber crops are essential components of the diet of over 1 billion
people in the tropical world and therefore of vital importance to the food
security system of the area where they are consumed as food i.e. Africa,
Asia, Latin America and the Caribbean's (FAO. 2000).
These crops, i.e. cassava, yams, cocoyam, sweet and Irish potatoes,
constitute a significant component of Nigerian diets, supplying 15.97% of
all calories, and 10.02% of all protein intakes.
Apart from the general domestic uses, these crops especially
cassava have great industrial potentials especially in animal feed
industry, industrial starch and alcohol production.
